Fall Soups

With cool, fall breezes gracing our presence, I thought I might share with you some of my favorite fall soup recipes.

Creamy Potato Soup

Wash and scrub a bag of yellow skinned buttery potatoes.

Place in a pot of water to boil until soft and tender when pricked with a fork.

Drain hot water and run cold water over potatoes.

Gently peel off potatoes’ skins.

Place potatoes back into empty pot and mash with a potato masher.

Add milk, several tbsp. butter, salt and pepper return to heat and cook at low heat till thoroughly heated.

Stir often.

*May add more milk if consistency is too thick.

Serve with grated cheese and bacon bits.

Chicken Taco Soup

Ingredients:

4 shredded chicken breasts

1 tsp. dried onion

1 tsp. minced garlic

2 tsp dried cilantro

2 cans of chicken broth

1 can tomato sauce (small)

¼ can El Pato Hot Sauce

½ pkg. El Paso Taco Seasoning

1 can corn

Water

Instructions:

Combine and heat all ingredients. Serve with tortilla chips, cheese, sour cream and avocado chunks.

Hominy Soup

Ingredients:

2 cans of black beans (drained and rinsed)

1 small can of Mexican style corn

1 can of Rotel

1 package of cream cheese

1 box of chicken stock

1 large can of hominy

Instructions:

Combine ingredients; cook on low till cream cheese combines. Serve with tortilla chips and grated cheese or cornbread.
